Nutrition Mission is primarily an educational campaign designed to provide the public with reliable, professional nutrition information and guidance.
Beth Ellen DiLuglio, MS, RD, CNSD, CCN, sole administrator of the site, received her Master's degree in Human Nutrition from Columbia University's College of Physicians & Surgeons Institute of Human Nutrition. While still an undergraduate, Beth Ellen requested that her biochemistry professor at Wheaton College develop a nutrition course so that she could study the science of nutrition. Dr. B. agreed and that began a long journey....
She has been a Registered Dietitian since 1987; Certified in Nutrition Support since 1990; a Certified Clinical Nutritionist (cncb.org) since 2002; an associate professor of nutrition since 1995 as well as a CDR provider of Continuing Education in nutrition since 2002.
Beth Ellen has been nominated twice to "Who's Who Among America's Teachers", an honor bestowed on only 2% of America's teachers.
Follow along as she develops Nutrition Mission and guides you through the sometimes confusing myths and truths about nutrition and health. Feel free to use this information for educational purposes, giving appropriate credit to Nutrition Mission and Beth Ellen.
Beth Ellen was named Nutrition Ambassador Finalist for 2007 out of 300 nationwide applicants. Read more here...

THE BASICS
There are some very simple keys to good nutrition and a healthy lifestyle:

Eat what grows out of the ground
in its whole, natural state
Be physically active;
Avoid an internally and externally toxic environment by consuming clean air, clean water, clean food
and avoiding undue stress.
Of course if we could do these things easily, we wouldn’t need Nutrition Mission!
The problem is, we are not taught the importance of plant based foods, most of us live a sedentary lifestyle and avoiding toxins and stress is virtually impossible in the world we live in today.
So, our first part of the mission is to INCREASE our intake of the foods and nutrients that will bring our bodies back into balance, INCREASE our daily activity and LIGHTEN our load of external and internal toxins.
At the same time, we need to DECREASE our intake of processed foods as processing destroys or removes several nutrients and often adds undesirable elements such as partially hydrogenated oils, chemicals and preservatives and post-harvest fumigation.
Increasing our intake of whole plant based foods will automatically INCREASE our intake of fiber, vitamins, minerals, antioxidants and phytonutrients (nutrients found exclusively in plant based foods) and DECREASE our risk of disease including cancer, heart disease, diabetes, osteoporosis, high blood pressure and obesity.
We can consume this array of powerhouse nutrients from eating NO FEWER THAN 5 (and preferably 9 to 12) servings per day of fruits and vegetables along with ample intake of legumes, whole grains, nuts and seeds.
Follow along and learn how to NUTRITIONIZE your recipes and your lifestyle!!
**** I strongly recommend consuming certified organic products, especially animal based products. Pesticides are potent endocrine disruptors and many are known carcinogens. When used, only 10% reaches the target organism, the remainder runs off into surface and ground water. Like most toxins, pesticides "bioaccumulate", that is they build up in the organism consuming them (including us! see PBS special on Secrets of the Chemical Industry). So, pesticides are found in the highest concentrations in animal based products. The bigger the animal or fish, or the higher up on the food chain, the more toxins have bioaccumulated. Look for "certified organic" or USDA organic on the label.
